They say don’t meet your heroes. In the case of Dr. Selina Wang, faculty director of the UC Davis Olive Center, and Sue Langstaff, legendary pioneer in Sensory Science, they are totally wrong.
Olive oil isn’t just about the Mediterranean Diet, a trending health fad, or a romanticized way of ancient life. There is deep science that goes into the agriculture, production, nutrition, sensory, and culinary processes that have made modern day extra virgin oil what it is, and helped elevate standards and improved quality around the world.
This is what we study over lifetimes and in this case, Dr. Selina Wang created a joyful, open community of professionals from beginners to titans of industry that gathered to learn from one another in an environment that was welcoming and resourced to the hilt with knowledge. I’ve never laughed so much in an educational setting and it made all the difference. We came with curious, open minds and left with friends for life.
There is a demand for olive oil education in the US, so if you happen to be able to make it out to UC Davis for one of their open enrollment courses, I can’t recommend this enough. 10/10.
